Eelektross is also one of my favorite Electric types. And you're right; because of its ability Levitate, it has no weaknesses. You can teach it a variety of moves with TMs, like Flamethrower (TM35) or Dragon Claw (TM02) or Brick Break (TM31), but let it have a strong Electric move like Thunderbolt (TM24) or Wild Charge (TM93)!
